This cake was stored for one year before being pressed for us in 2020. There is an unmissable and truly remarkable aroma that lies within all high grade White tea that I’ve tried, Berg is no exception, it is abundant here! Once the water hits the leaf this syrupy, autumnal red berry nostril candy projects the air around the gong fu’er. Aroma off the rinse is a bright and syrupy raspberry. The broth is a very dark yellow turning orange. Taste early on is mimicking the rinse with a brilliant, bright raspberry! This is a pure, clean tasting and elegant white tea. Later steeps unveil more depth and structure. The texture is wonderfully soft and the liquor is salivating. The creeping chi is quite strong, a classical, forcefully relaxing Gao Shan meditative feeling. Experiment yourself with brewing times. Light brewing will offer a relaxing experience with subtle nuances whereas going hard will offer more robustness and comforting structure and flavours. This is a cake that has huge potential for further growth in flavour & chi in the future!
