Fo Shou (佛手), meaning “Buddha’s Hand,” is a lesser-known but traditional variety of Wu Yi Rock Oolong. Although it’s not widely cultivated today, its roots trace back to Yongchun County near Quanzhou in Fujian Province, where it was first brought to the Wu Yi region centuries ago.
The Taste:
Aroma of the roast on the rinse is fantastic. Make sure to study the aroma with the gaiwan to the nose for a while, giving time for the leaf to cool, you will be rewarded. Minerality is strong but balanced and clings to the palate between infusions. feel free to push the infusions long for a deeper understanding of this tea. coupled with roasty notes and minimal but slightly present sweetness this Yancha is a good choice is your a fan of Rock minerality! Creeping meditative / relaxing chi!
This cultivar is characterised by its large, greenish-blue leaves, which are not tipped and notably do not produce tea flowers (茶花).
The processing of Fo Shou involves multiple rounds of low-temperature roasting. After each roast, the tea is rested for several months before undergoing the next stage. Following the third and final roast, the tea is aged once more before it becomes available for purchase.
